Ingredients
- 6 Yukon Gold potatoes (about 2 lbs), peeled & cut in chunks
- 1 onion, chopped
- 1/2 cup buttermilk
- 2 tbsp butter
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 cup shredded old Cheddar cheese
- 2 tbsp grated Parmesan cheese
Preparation
Step 1
In large pot of boiling salted water, cover and cook potatoes and onion until tender, about 15 minutes; drain.
Mash with buttermilk, butter and salt and pepper until smooth. Stir in cheeses and sprinkle with chopped fresh parsley.
