Ingredients
- Cooking spray
- 1/2 lb. chorizo
- 3 cups potatoes, diced small
- 1/2 onion, diced small
- 1/2 bell pepper (red, green or yellow) diced small
- 1 tea. Mexican oregano
- salt and pepper to taste
Preparation
Step 1
Heat a large saute pan on medium-high heat. When hot, spray with cooking oil and add chorizo. Cook, stirring occasionally, until browned.
Add potatoes, onion, pepper and oregano. Cook until tender, about 12-15 minutes.
Salt and pepper to taste.
