Ingredients
- 2 lbs. ground beef
- 1 med onion, chopped
- 1 can (15oz) black beans, rinsed and drained
- 1 to 2 T chili powder
- 2-3 tsp ground cumin
- 1/2 tsp salt
- 4 flour tortillas (7 in.)
- 1 can (10 3/4 oz) cream of mushroom soup, undiluted
- 1 can (10 oz) diced tomatoes and green chilies, untrained
- 1 cup shredded cheddar cheese
Preparation
Step 1
In a skillet, cook the beef and onion until the meat is no longer pink; drain. Add beans, chili powder, cumin and salt. Transfer to a greased 13x9 baking dish. Arrange tortillas over the top. Combine soup and tomatoes; pour over the tortillas. Sprinkle with cheese and bake uncovered at 350° for 25-30 min, or until heated through.
