Orange-blueberry Quick Bread

  • orange glaze:
  • 1 package (16.5 oz.) Krusteaz Wild Blueberry Muffin Mix
  • 1/3 cup of water
  • 1/3 cup vegetable oil
  • 3 eggs
  • 2 tsp. orange zest, finely grated
  • 3/4 cup powered sugar
  • 1-2 Tbsp. orange juice



Step 1

Preheat the oven to 350ºF. Lightly spray 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan with nonstick cooking spray. Drain blueberries rinse in cold water and set aside. Combine water, oil, eggs, and muffin mix in medium bowl. Stir until moistened. Gently fold in brained blueberries and orange zest. Place batter into prepared loaf pan. Bake 44 to 48 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes and remove to wire rack to cool completely

to make orange glaze, whisk together powdered sugar and orange juice until smooth. Drizzle cooled bread with orange glaze.
