Ingredients
- 8 oz Dried, small red beans, rinsed
- 8 C Water
- 1 Smoked ham hock (about 8 oz.)
- 1 C Onion, chopped
- 1 1/2 t Garlic, minced
- 1 tS alt
- 1 t Ground Cumin
- 1 C Green pepper, chopped
- 1 C Ripe tomato, chopped
Preparation
Step 1
1.To soften beans, soak beans in 4 C water overnight. May add small amount of baking soda to water. OR quick method, boil beans for 2 minutes in plain water, let stand 1 hour.
2.Drain water from beans and add rem. 4 C water. Add ham hock, onion, garlic, salt and cumin. Bring to boil, reduce heat and simmer uncovered 1 ¼ hour, stirring occasionally, until beans are almost tender.
3.Add pepper and tomato and simmer another 30 minutes, until beans are very tender and liquid has cooked down to a rich sauce.
4.Remove ham hock. Cut meat into 1” pieces, return to beans. Serve over cooked rice topped with chopped onions.
