Honey Apple Pancake

For added fiber, substitute 1/4 cup of whole-wheat flour for the white flour.

Ingredients
- 1-1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 cup milk
- 1/4 cup apple cider
- 2 Tablespoons honey
- 1 large egg, lightly beaten
- 1 medium Granny Smith apple, peeled and coarsely grated
Preparation
Step 1
In a large bowl, combine flour baking powder, salt, cinnamon and nutmeg. Mix well.
Stir in milk, cider, honey and egg. Stir in grated apple. Spray griddle or skillet with vegetable cooking spray. Heat griddle over medium heat until a drop of water sizzles on it
Pour batter onto skillet making 3-inch rounds; repeat with remaining batter.
Cook, until tops are bubbly ,about 2 minutes, turning only once. Using a flat spatula, flip pancakes. Cook until golden, about 1 minute longer. serve immediately
