Ingredients

  • 1 cup sugar
  • 1/4 cup flour
  • 1 tbsp. quick cooking tapioca
  • Dash salt
  • 1 cup whipped cream
  • 1/4 tsp. vanilla
  • 4 cups sliced peaches
  • Additional sugar

Preparation

Step 1

-Combine sugar, flour, tapioca and salt, mix well.
-Set aside 2 tbsp. cream.
-Combine reamining cream with vanilla, add to sugar mixture.
-Add peaches, toss to coat.
-Let stand for 15 min.
-Pour peaches mixture into crust.
-Top with lattice crust.
-Seal and flute edges.
-Brush with reserved cream.
-Sprinkle with additional sugar.
-Cover edges loosely with foil
-Bake @400F for 50-55 min, or till golden brown and bubbly
