DEE'S GINGERSNAPS

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 large eggs
  • 1/2 cup molasses
  • 2 tsp vinegar
  • 1 tbsp freshly cracked white pepper
  • 3 tbsp ground ginger
  • 1 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice
  • 3 1/2 cups unsalted flour
  • white sugar for sprinkling

Preparation

Step 1

Set the oven at 375F. Line several sheets with parchment. Beat the butter, add the sugars and mix well. Add the eggs, molasses and vinegar. Mix well. Add the remaining ingredients and mix to just enough to blend.

Form into balls, dipping hands in cold water to prevent sticking, and arrange on sheet with room for spreading. Dip a fork into cold water and use its tines to flatten the cookies.

Sprinkle with white sugar. Bake for 10 minutes. Cool on the sheet before removing.
