scallions, thinly sliced
tsp. grated lemon zest
tbsp. fresh lemon juice (half lemon)
tbsp. olive oil

1. Prepare couscous according to package. Add scallions, lemon zest, lemon juice, and 1 tbsp. oil. Season with salt & pepper. 2. Lay chicken flat and cut long slit into thick side of each breast, making a deep pocket. Stuff each breast with couscous, packing it tightly. 3. In large skillet, heat remaining oil over medium. Season chicken with salt and pepper. Place in skillet and cook until browned on one side (6-8 minutes). Turn chicken over carefully and add ½ cup water to skillet. Cover and cook until chicken is cooked through (6-8 more minutes).
