Ingredients

    Cup mashed ripe bananas (about 3)

  • 1

    Cup sugar

  • 3/4

    Cup salad oil

  • 2

    Eggs

  • 2

    Cups sifted flour

  • 1

    Tsp Baking soda

  • 1

    Tsp Baking Powder (not in original recipe)

  • 1/2

    Tsp salt

  • 1/2

    Tsp cinnamon

  • 1

    Cup raw, grated carrot

  • 1/2

    Cup chopped pecans

Directions

Combine bananas, sugar, oil & eggs. Beat for 2 minutes. Fold dry ingredients into batter. Stir in carrots & nuts. Pour into greased loaf pan and bake 350° 6-55 to 60 minutes. Cool, wrap & set overnight before cutting.
