Ingredients

  • Mince:

  • 2

    Tablespoons olive oil

  • 2

    Lbs lean ground lamb

  • fresh ground pepper and salt

  • 1

    Large onion

  • 1

    Large carrot (or 2-3 smaller size)

  • 1

    Tablespoon fresh chopped thyme

  • 1/2

    Tablespoon of fresh rosemary

  • 2

    Tablespoons of tomato puree

  • 2

    oz Worcestershire sauce

  • 2

    cloves of garlic

  • 7

    oz red wine

  • 1

    cup chicken stock

  • Mashed Potatoes:

  • 2

    Lbs Yukon Gold or Red potatoes

  • 4

    Tablespoons of butter

  • heavy whipping cream

  • 2

    egg yolks

  • fresh ground pepper and salt to season

  • 1/4

    cup fresh grated Parmesan cheese (at least)

Directions

Mince: Put oil in the pan and heat on med high, add the lamb and break up in the pan. Salt and pepper to taste. Browning the lamb will help take the excess grease out of the lamb. Drain excess grease and return to heat. Grate carrot and onion in the lamb and saute further. Grate garlic and saute' with the lamb. Add Worcestershire and mix well. Add tomato paste and mix well. Add red wine and cook until wine is reduced, then add chicken stock. Cook for about 10 min until the chicken stock reduces a little. Mashed Potatoes: Peel and boil potatoes until fork tender. Drain and return to pan and cook off remaining water on potatoes. Place butter and salt and pepper to taste in with potatoes. Mash with a normal masher or use a ricer. Add heavy cream to make potatoes creamy. Add egg yolks and Parmesan cheese and mix well. Putting Dish Together: Place mince in a dutch oven or large baking dish, then topped with the creamy mash. Season with salt and pepper on top then grate some more fresh Parmesan over the top of the mash. Use a fork to rough up the top. Bake at 400 degrees for about 30 minutes or until top is golden brown.
