Spaghetti with Browned Butter and Mizithra Cheese

Ingredients

  • 1 c salted butter
  • 1 c Mizithra Cheese
  • Spaghetti, Angel Hair or pasta of choice

Preparation

Step 1




Cut 2 sticks of butter into 8 pieces and place in a 2 qt sauce pan.
Place the pan of butter over medium heat. Bring butter to a slow boil (about 5 min.).

Once the butter begins to boil, stir constantly to prevent residue from sticking to bottom
of the pan. As the butter cooks, it will start to foam and rise (about 5 min.). Continue
Stirring, to avoid overflowing.

Once the butter stops foaming and rising, cook until amber in color (1 to 2 min. more). It
will be a pleasant caramel aroma.

Remove from the heat. (The butter can be stored in the refrigerator and reheated in a
microwave and used as needed.

Boil the pasta of choice until Al Dente. Drain the pasta and divide into servings. Spread
¼ c of Mizithra Cheese on each serving, and top with ¼ cup of hot brown butter.
