Ingredients
- 1/4 cup butter, melted
- 3 Tbs Dijon-style mustard
- 1 1/2 Tbs honey
- 1/4 cup Italian bread crumbs
- 1/2 cup very finely chopped pecans
- 4 tsp minced flat-leaf parsley
- 4-6 oz salmon fillet pieces
Preparation
Step 1
Preheat oven to 450 degrees'
Stir together butter, honey, mustard in a small bowl and set aside. In another bowl, stir together the bread crumbs, parsley and pecans.
Lightly season the salmon with salt and pepper and set pieces on a lighly greased sheet. Brush the salmon generously with the mustard-honey mixture and sprinkle the bread crumb mixture over salmon (or dip the pieces in the crumb mixture).
Bake salmon until just cooked through, 10-15 minutes, depending on the thickness of the fillets.
