New Potatoes Baked With Bay Leaves And Lemon

  • 2 lb red new potatoes quartered
  • 1/4 cup + 2 tablespoons lemon juice
  • 1 1/2 tsp oregano
  • 1 tsp grated lemon peel
  • 1 tsp salt
  • 1/4 tsp ground pepper
  • 1/2 cup olive oil
  • 20 small bay leaves


Servings 8
Preparation time 15mins
Cooking time 60mins


Step 1

Preheat oven to 375
Lightly oil shallow baking dish
Place potatoes in bottom of pan
Mix rest of ingredeients and pour over potatoes
Toss well
Place bay leaves around potatoes
Place in center of oven
Bake until potatoes are gloden brown
Turn potatoes every 15 minutes
Bake about 45 minutes
Discard bay leaves
