Ingredients

  • Preheat oven to 475 degrees.
  • 5 cups sliced peaches (3 lbs)
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • 1/2 teaspoon lemon juice
  • Mix together, pour into 8x8x2 pan, dot with 2 tablespoons butter.
  • BATTER
  • 1/2 cup unsifted flour
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1 egg, slightly beaten

Step 1

Combine all ingredients, beat until smooth. Drop in 9 evenly spaced portions on the filling. Batter will spread during baking. Bake 35-40 minutes until peaches are tender and crust is golden. Serve warm with cream or ice cream.
