Naughty Fries with Pepper Jack Dipping Sauce

Ingredients

  • Baked Parmesan Fries:
  • 6 medium red potatoes, scrubbed, leave skin on
  • 1/4 cup olive oil
  • 1 cup grated Parmesan
  • 1 teaspoon Thyme
  • 1 tablespoon Italian seasoning
  • Sauce:
  • 4 ounces cream cheese, room temperature.
  • 2 tablespoons of butter
  • 1 cup heavy whipping cream, divided
  • salt, pepper and onion powder, to your taste
  • 3 cups pepper jack cheese, grated and divided
  • wing/buffalo sauce to drizzle on top–as much as you want.

Preparation

Step 1

Baked Parmesan Fries:
Preheat oven to 400 degrees. Cut potatoes into wedges. Place in large baggie. Pour the olive oil, Parmesan and seasonings onto the potatoes. Shake in baggie until all wedges are coated. Lay on covered baking sheet with aluminum foil (dull side up). Bake 30-40 minutes until golden brown and crispy.

Sauce:
In a medium size sauce pan (on medium-high heat), add softened cream cheese, butter and ½ cup of heavy whipping cream. Whisk until all blended together. Add the other ½ cup of heavy whipping cream.
Continue to whisk until it starts to thicken…but do not let it come to a boil. Once it is heated up again, the sauce will start to thicken.
Add salt, pepper and onion powder to taste. Set aside off the burner and add 1 and a half cup of grated pepper jack cheese. Stir until all the cheese is melted. Spoon immediately into dipping bowls.

Fries:
When the fries come out of oven, sprinkle with the remaining 1 and half cups of pepper jack cheese. Slide the fries back into the oven to melt the cheese for about 2 minutes. Drizzle on your favorite hot wing or buffalo sauce on top of fries. Then serve them with the Pepper Jack Dipping Sauce!
