Rigatoni in Vodka Sauce

Ingredients

  • olive oil
  • 2 Cups chopped celery
  • 1 Cup chopped onion
  • 1 clove of garlic
  • 1 Cup of vodka
  • 1/2 lb of prosciutto cut into bite size pieces
  • 1 28 0z can crushed tomatoes
  • 1 lb rigatoni pasta
  • 1 cup heavy cream or half-n-half
  • Italian seasoning

Preparation

Step 1

saute celery, onion, and garlic in enough olive oil to coat the pan. Add prosciutto and vodka and cook over low heat until vegetables are translucent. Meanwhile start cooking pasta.
Add crushed tomatoes and seasoning to vegetable mixture. Cook 5 minutes. Add cream and cook for another 5 minutes. Add cooked rigatoni, blend and heat through. Makes 4 to 6 servings
