Smashed Cheesy Cauliflower and Potatoes

Ingredients
- 1 head cauliflower (cut into florets)
- 2 red or white medium potatoes
- (seasoning to taste, if steaming)
- 2 cloves of garlic
- 1/2 tsp. kosher salt
- 1/4 tsp. black pepper
- 4 Tbsp. I Can't Believe It's Not Butter, or margarine
- 4 oz. Cabot Vermont Cheddar (light)

Preparation
Step 1
If Steaming (best way)
Season cut up potatoes and cauliflower florets with some salt, pepper, and any seasoning you like (garlic powder, onion powder, etc.). Steam until done (soft).
If Boiling
Boil cut up potatoes and cauliflower florets in salted water until done (soft). Drain.
While cauliflower and potatoes are cooking, shred cheese. Add cheese and remaining ingredients to cauliflower and potatoes. Mash with potato masher. Add salt and pepper to taste. Garnish with parsley or chives, if desired.
