Peel the yellow peel off the lemons with a potato peeler. Mix in pan water and sugar in a 50/50 ratio. Boil lemon peels in water sugar mixture for 20-30 minutes. Cool on parchment paper. Roll lemon peels in sugar; Store in the refrigerator.
Save the lemon simple syrup to sweeten tea.
