Spiced Apple Drops

Apples in a cookie? It can be done! Chop 'em and mix 'em into spiced cookie dough, then top 'em with apple frosting.

Ingredients
- 1/2 cup butter, softened
- 2/3 cup granulated sugar
- 2/3 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1 egg
- 1/4 cup apple juice or apple cider
- 2 cups all-purpose flour
- 1 cup finely chopped, peeled apple
- 1 cup chopped walnuts
- 1 recipe Apple Frosting
- 4 cups sifted powdered sugar
- 1/4 cup softened butter
- 1 teaspoon vanilla
- 3 - 4 tablespoons apple juice
Preparation
Step 1
1. Preheat oven to 375 degrees F. Lightly grease cookie sheets; set aside. In a large mixing bowl beat butter with an electric mixer on medium speed for 30 seconds.
2. Add granulated sugar, brown sugar, cinnamon, baking soda, nutmeg, and cloves. Beat until combined, scraping sides of bowl occasionally. Beat in egg and apple juice until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour, the apple, and walnuts.
3. Drop dough by rounded teaspoons 2 inches apart onto prepared cookie sheets. Bake for 10 to 12 minutes or until edges are light brown. Cool on cookie sheets for 1 minute. Transfer cookies to a wire rack; cool. Frost cookies with Apple Frosting.
Directions
1. In a medium mixing bowl beat powdered sugar, butter, vanilla, and enough apple juice to make a frosting of spreading consistency.
