Mexican Rice

  • Optional:
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 tsp freshly minced garlic
  • 8 oz. can tomato sauce
  • Cilantro sprigs
  • green peas

Try this recipe as an alternative to an overpriced box mix!

First saute a 1/2 cup chopped onion for about 5 min in one tbsp extra virgin olive oil, followed by 1 tsp freshly minced garlic for 30 seconds.

Add rice, chicken broth and tomato sauce and throw in a few sprigs of fresh cilantro for more flavoring if you want. Bring to a boil, reduce heat to low and cover. Simmer for 20-25 minutes.

You can also you can add peas to the rice at the end if you want.
