Bread Pudding with Anise

Ingredients

  • 4 slices 2 day old white bread
  • 8 tsp reduced calorie tub margarine
  • 6 TB golden raisins
  • 2 cups low fat milk
  • 2 eggs
  • 3 TB honey
  • 1/2 tsp anise seeds, lightly crushed
  • 1/2 tsp vanilla
  • pinch of salt

Preparation

Step 1

Spray a 1 1/2 qt casserole with nonstick cooking spray. Spread both sides of the bread with the margarine; cut each into quarters. Arrange 8 pieces in the casserole; sprinkle with 3 TB of the raisins. Repeat with the remaining bread and raisins.

In a medium bowl, whisk the milk, eggs, honey, anise seeds, vanilla, salt; pour over the bread mixture. Let stand at room temperature 1 hour.

Preheat the oven to 350. Place the casserole in a roasting pan; pour hot (not boiling) water halfway up the sides of the roasting pan. Bake until a knife inserted in center of the egg mixture comes out clean, about 1 hour. Serve warm.
