CHEESY MASHED POTATOES

Ingredients

  • 4 lbs. Potatoes, quartered
  • 4 tbsp. olive oil
  • 1/4 cup chicken stock
  • 1 cup grated cheddar cheese
  • salt and pepper to taste

Preparation

Step 1


1. Place potatoes in a large pot of salted water and bring to a boil, cooking until tender. Drain the water and mash the potatoes, adding the oil and stock until the desired texture is achieved. Add the cheese and mix thoroughly and season to taste.
