Ingredients

  • 8-9 potatoes, peeled and cubed
  • 5 green onions, chopped up
  • 1 lb, bacon, cooked and crumbled; reserve some grease
  • 2/3 C. flour
  • 6 C. of milk
  • 1 stick butter
  • sour cream
  • salt
  • pepper
  • shredded cheese of your choice

Preparation

Step 1

Boil potatoes for about 18 mins in salted water; test with fork to see if done; should break apart but not be mushy. Drain an set aside. In a big stock pot add butter and a couple tablespoons of bacon grease to medium heat; let butter start to melt. Stir constantly to keep from burning for 1-2 mins. Slowly add flour a bit at a time, stirring constantly to make a roux(paste). After all flour is added, slowly add milk a cup at a time, stirring constantly until paste is dissolved and smooth, not lumpy. Bring to mild boil; add half of green onions and drained potatoes. Rememebr to keep stirring so it doesn;t scorch or stick. Add 8 crumbled bacon strips to pot. Season with salt and pepper to taste. Reduce heat add stir in 5 TBS of sour cream until smooth.
