Ingredients

  • 3 Tbsp Olive Oil
  • 1 Large Onion, chopped
  • 1 Stalk Celery, chopped
  • 2 Cloves Garlic, pressed
  • 1 tsp Dried Basil
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Ground Thyme
  • 1/4 cup Pearl Barley
  • 2 Medium Potatoes, peeled & diced
  • 2 Carrots, diced
  • 8 cups Chicken or Vegetable Stock
  • 1 can Kidney Beans, rinsed and drained
  • 2/3 cup Small Shell Pasta
  • 1 7 oz can Tomato Paste
  • Salt & Pepper to taste

Preparation

Step 1

Heat oil in a large pot over medium heat. Add onion, celery, garlic and all spices. Cook til onion is soft.

Add stock, barley, potatoes and carrots. Bring to a boil, then reduce heat and simmer covered for 20 minutes.

Mix in beans, macaroni, and tomato paste. Simmer 20 minutes.

Season with salt & pepper.
