Ingredients

  • Red and Yellow Pepper
  • Broccoli Flowerettes
  • Zucchini
  • Eggplant
  • Asparagus
  • Red Onion
  • Fresh Fennel
  • Portabella Mushroom
  • Olive Oil
  • 2 cloves garlic
  • salt and fresh ground pepper
  • Vinaigrette
  • 3/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 1 small shallot chopped fine
  • 2 cloves garlic chopped fine
  • 1 tablespoon honey
  • salt
  • Fresh ground pepper
  • Italian seasoning

Preparation

Step 1

Slice 2 cloves of garlic, olive oil, few dashes of balsamic vinegar, salt and fresh ground pepper. Toss with veggies. Spread veggies on cookie sheet and cover with tin foil.

Broil about 20-25 minutes

Mix vinegarette and heat in microwave for 45 seconds

Pour over vegetables
