Balsamic Chicken and Eggplant

Ingredients

  • 1 large eggplant, sliced lengthwise in four thick slices
  • 4 boneless chicken breasts
  • 1 can(14oz) crushed tomatoes
  • 1/4 cup balsamic vinegar
  • 1 tbsp. olive oil
  • 2 tbsps. brown sugar
  • 1/4 cup whole basil leaves
  • Black pepper

Preparation

Step 1

Preheat oven to 400 degrees. Spray a large baking dish with vegetable baking spray. Place eggplant slices in the dish. Top each slice with a chicken breast. Combine tomatoes, balsamic vinegar, oil, and sugar. Pour over chicken. Add basil. Sprinkle with pepper. Bake 30 minutes.
