Tex Mex Skillet Dinner

Ingredients

  • 1.1 /2 Lbs Ground Beef
  • 1 Small chopped Onion
  • 1 Small chopped Green Pepper
  • 1 (15oz) Can Tomato sauce
  • 1 Tbsp Chili Powder
  • 1.1 /2 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 Cups Yellow Corn Meal
  • 1 tsp Sugar
  • 1/2 tsp Baking Soda
  • 1.1 /2 C Buttermilk
  • 2 Large Eggs, beaten
  • 3 Tbsp Melted Butter
  • 1 C Shredded Sharp Cheddar

Preparation

Step 1

Bake 400º
Preheat oven.

1) Brown beef in a medium ovenproof
skillet. Add onion and green Pepper;
cook 10 minutes.
2) Add tomato sauce, chili powder,
1 teaspoon salt and the black pepper.
Cook for 3 minutes.
3) In a medium bowl, mix the corn meal,
sugar, baking soda and the remaining
salt. Stir in the buttermilk, eggs
and butter.
4) Stir the cheese into the beef
mixture in the skillet. Spread the
corn meal batter on top.
Bake for 30 minutes.
5) Remove skillet from oven.
Let stand for 10 minutes, then
loosen the edges of the bread
topping with a knife.
Hold the skillet handle with an
oven mitt; turn upside down onto
a platter. Cut into wedges.
