Ingredients
- 2 multigrain slices bread, toasted and torn
- 1/4 cup roasted cashews
- 1/4 cup grated parmesan cheese
- 1/4 cup grainy mustard
- 1 1/2 lbs. tilapia fillets (about 8)
Preparation
Step 1
Heat oven to 375°.
Pulse the bread to make bread crumbs and transfer to medium bowl. Pulse the nuts until finely ground and transfer to bowl along with the parmesan cheese. Add some salt and pepper.
Spread mustard evenly over tilapia. Press crumb mixture into fish to coat. Drizzle olive oil on top. Transfer to baking sheet and roast for about 12 minutes.
I probably did a 400° to 425 oven, and I know longer than 12 minutes.
