Ingredients

  • 1 lb ground Sausage
  • 8 Cup Stale Bread, crumbs, highly packed
  • 1/4 Cup Butter or oleo
  • 2 Cloves Garlic, crushed
  • 1 Cup Onion, chopped
  • 2 Cup Celery and leaves, finely cut
  • 1 Cup Almonds, shredded or ground
  • 1 Cup Mushrooms, chopped coarsely
  • 1/4 Cup Parsley, chopped
  • 1/4 Cup Green Pepper, chopped
  • 2 Tsp Salt
  • 1/2 Tsp Pepper
  • 1 Tsp Poultry Seasoning
  • 1/2 Cup Condensed Consomme
  • 1/2 Cup Dry Sherry

Step 1

Saute sausage in skillet, stirring frequestly with fork to break up meat. When browned, add bread. Stir well to mix crumbs with the meat to allow bread to absorb sausage fat. When well belended, put in large mixing bowl. In same skillet, melt butter; add garlic, celery, onions, almonds, mushrooms, parsley, peppers and seasonings. Cook gently till onions are soft, stirring to blend well. Add consomme and dry sherry; heat. Combine with sausage crumb mixture, tossing lightly. If stuffing seems too dry, add additional consomme and sherry in equal parts. Stuffing should not be soggy but nicely moist. Allow stuffing to cool. This is enough stuffing for a 12 to 15 pound turkey.
