Chicken Satays w/ Peanut Sauce

Ingredients

  • Marinade:
  • 8 Boneless, skinless chicken breasts.
  • 2 Tbsp dry sherry
  • 2 Tbsp soy sauce
  • 2 Tbsp honey
  • 1 Tbsp chopped ginger
  • 1 tsp coriander
  • 1 clove of garlic, crushed
  • 1/4 cup vegetable oil
  • Peanut Sauce:
  • 4 tsp of canola oil 2 tsp sesame oil
  • 1/2 cup red onion, minced
  • 2 tsps minced garlic
  • 1 Tbsp brown sugar
  • 1 Tbsp red wine vinegar
  • 1/3 cup peanut butter
  • 1/2 tsp coriander
  • 3 Tbsp ketchup
  • 3 Tbsp soy sauce
  • 1 Tbsp lemon juice
  • 1/2 tsp pepper

Preparation

Step 1

Cut chicken into 3/4 inch cubes.

In a bowl, mix marinade ingredients.
Add chicken cubes, mixing gently to coat with marinade.

Refrigerate overnight, turning occasionally.

Soak 40 (appetizers) or 20 ( dinner ) wooden skewers in water of 30 minutes.

Thread each skewer with marinated chicken cubes.
2 on each for appetizers or 5 or 6 for dinner.

Broil for 3 -4 minutes until no longer pink inside.

Peanut Sauce:
Heat oils in saucepan and saute onions & garlic until softened. Add sugar & vinegar, cooking until sugar dissolves. Remove from heat and add remaining ingredients. Mix until blended.
