BLUE CHEESE & APPLE SALAD WITH BOSTON LETTUCE & WALNUTS

Ingredients
- 2 lemons, juiced
- 1/2 t. Dijon
- 1 shallot, minced
- 1/4 t. each salt and pepper
- Dash honey
- 6 T. grapeseed or canola oil
- 1 t. fresh tarragon, finely chopped
- 2 T. water
- 1 head boston lettuce
- 2 Mutsu or Granny Smith apples
- 6 – 8 oz.blue cheese, crumbled
- 2/3 c. walnut pieces, lightly toasted

Preparation
Step 1
In a bowl, whisk together lemon juice, mustard, shallot, salt & pepper and honey. Slowly drizzle in oil, whisking constantly. Add tarragon and whisk in water. Set dressing aside.
Arrange lettuce leave on a platter or individual salad plates. Leaving skin on, cut apple into thin slices and arrange them over lettuce. Sprinkle blue cheese over salad and sprinkle with walnuts. Drizzle vinaigrette over salad and serve.
