Oatmeal Coconut Raspberry Bars

Ingredients

  • 1 1/2 cups sweetened flaked coconut
  • 1 1/4 cups flour
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1 1/2 sticks (3/4 cup) unsalted butter, cut into pieces
  • 1 1/2 cups oats
  • 3/4 cup raspberry jam

Preparation

Step 1

1. Preheat oven to 375F.
2. Spread 3/4 cup coconut on baking sheet, toast 8 minutes and cool.
3. Blend flour, sugars, and salt.
4. Add butter and blend until dough forms.
5. Transfer to bowl and knead in oats and toasted coconut.
6. Reserve 3/4 cup dough. Press remainder into 13x9 inch buttered metal pan.
7. Spread jam over it.
8. Crumble reserved dough evenly over jam, sprinkle with remaining coconut.
9. Bake for 20-25 minutes, cool completely.
10. Loosen, lift out in one piece and transfer to cutting board.
11. Store in airtight container at room temperature.
