Ingredients
- 2 lbs fresh spinach, washed
- 1/2 lb of arugula or endive lettuce, washed
- Small crate of fresh strawberries, washed & sliced
- Package of dried cranberries
- Package of sunflower seeds
- Raspberry vinaigrette (or similar flavor) dressing

Step 1
In a large bowl, mix greens and sliced strawberries. Add dried cranberries and sunflower seeds according to your taste, and approximately half of a bottle of dressing (also to taste), tossing ingredients until coated. Makes 10-15 servings.
My wife brought this idea home from a fellow teacher, and I played with ingredients and amounts until hitting on this combination. It doesn’t take a lot of dressing to coat everything, depending on how much spinach is used, so it’s a very healthy salad for those being cautious, especially if using a light dressing.
