Ingredients

  • 2

    lbs fresh spinach, washed

  • 1/2

lb of arugula or endive lettuce, washed

  • Small crate of fresh strawberries, washed & sliced

  • Package of dried cranberries

  • Package of sunflower seeds

  • Raspberry vinaigrette (or similar flavor) dressing

Directions

In a large bowl, mix greens and sliced strawberries. Add dried cranberries and sunflower seeds according to your taste, and approximately half of a bottle of dressing (also to taste), tossing ingredients until coated. Makes 10-15 servings. My wife brought this idea home from a fellow teacher, and I played with ingredients and amounts until hitting on this combination. It doesn’t take a lot of dressing to coat everything, depending on how much spinach is used, so it’s a very healthy salad for those being cautious, especially if using a light dressing.
