  • Macaroni, enriched, 2 cup elbow shaped
  • Cheddar cheese, Low Fat, 2 cup, shredded
  • Milk, nonfat, 2 cup
  • Butter, salted, 1 tbsp
  • Flour, white, 1 tbsp
  • salt and pepper to taste



Step 1

Preheat oven to 350. Spray casserole dish with non-stick cooking spray.
Cook macaroni according to package directions. When done, pour macaroni into casserole dish.
Melt butter in a saucepan and add flour to make a roux.
Add salt and pepper.
Add milk and cheese. Continue to cook until cheese melts and sauce thickens.
Pour sauce over macaroni and stir to incorporate. Cook for 45 - 60 minutes or until cheese bubbles.
Makes 8 1/2 cup servings
