Peach Melba Bread Pudding

Ingredients

  • 4 cups White bread crumbs
  • 1 16 oz Sliced peaches in its own juice drained and chopped
  • 1/4 cup Peach juice from peaches
  • 1/2 cup Seedless raisins
  • 1 1/4 cups Skim milk
  • 1 8 oz Egg Beaters® 99% egg substitute
  • 1/2 cup Sugar
  • 2 Tbsp. Margarine
  • 1 tsp. Vanilla extract
  • 1/2 tsp. Cinnamon
  • 1/2 cup Seedless Raspberry preserves - warmed

Preparation

Step 1

Heat oven to 350.

In a greased 2-quart casserole, combine bread cubes, peaches and raisins and set aside.
In a medium bowl, combine reserved peach juice, milk, egg product, sugar, margarine, vanilla and cinnamon
Pour over bread mixture


Bake 45 - 50 minutes or until knife inserted in center comes out clean.

Serve warm topped with preserves.
