Lemon Pepper Popovers

For maximum height, never open the oven door while they are baking or they could sink.
Spray popover cups, or a muffin pan with cooking spray so the batter can rise.

Ingredients
- 1 cup all-purpose flour
- 1 cup skim milk
- 3 egg whites, lightly beaten
- 1 Tablespoon olive oil
- 1 teaspoon fresh lemon juice
- 1 teaspoon grated lemon peel
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
Preparation
Step 1
Preheat oven to 450 degrees. Spray a 6-cup popover mold or muffin pan with vegetable cooking spray.
In a large bowl, whisk together flour and milk. Whisk in egg whites, oil, lemon juice lemon peel, pepper and salt until just combined. Spoon batter into prepared pan, filling each cup three-quartes full.
Bake popovers for 15 minutes. Reduce heat to 375 degrees. Continue baking until ;popovers are puffed and golden,about 20-25 minutes longer. Serve immediately.
