Chicken soup (mom's)

Ingredients

  • whole chicken - i.e. young or fryer
  • large onion
  • stalk of celery
  • curly fresh parsley
  • sage
  • salt and pepper
  • optional: tomato

Preparation

Step 1

cover chicken with water and boil then simmer for couple hours...til broth has nice yellow tint

take out chicken and pour broth thru strainer into another pot. sit in refrig over night and next day, skim fat off top

simmer broth with whole onion, celery, parsley, salt, pepper and sage. leave parsley long. can add tomato. 2 hours at least. optional to also add 2-3 chicken bullion cubes for added taste and add a little water if too much evaporates.

pour broth over favorite soup noodles and also add chicken. Don't add chicken to soup that is simmering b/c it will pull apart and get stringy. store broth, noodles and chicken separately in refrig.
