Ingredients
- 1 1/2 lb. chicken tenders
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- 1 T vegetable oil
- 3/4 lb. smoked turkey sausage cut into 1/4" slices
- 2 medium onions, chopped
- 1 large bell pepper, chopped
- 1 C chopped celery
- 1 clove garlic, minced
- 2 C uncooked rice
- 1/4 to 1/2 tsp. ground red pepper
- 2 1/2 C chicken broth
- 1 C sliced green onion
- 1 medium tomato, chopped
- celery leaves for garnish
Preparation
Step 1
Season chicken with salt and pepper. Heat oil in dutch oven. Add chicken until browned. Add sausage, cook 2 to 3 minutes. Remove chicken and sausage, set aside.
Add chopped onions, bell pepper, celery and garlic. Cook and stir until crisp tender. Stir in rice, red pepper, broth, and reserved chicken and sausage. Bring to a boil. Simmer 30 minutes.
Stir in green onions and tomato.
Garnish with celery leaves. Serve immediately.
