Herb Roasted Whole Chicken

Ingredients

  • 3-4 lb whole chicken, dry skin well with a paper towel
  • 1 lemon, cut in half
  • 1 small onion, halved or quartered
  • 2 cloves of garlic, smashed
  • 1-2 Tbsp chopped fresh herbs OR 1-2 tsp dried herbs
  • (combo of sage, rosemary and thyme)
  • 2-3 Tbsp olive oil
  • 1/2 - 1 Tbsp salt
  • 1 tsp pepper

Preparation

Step 1

Preheat your oven to 450 degrees.
Toss herbs, salt, and pepper into a small bowl.
Add 2-3 tablespoons of oil and stir.
Fill cavity of bird with lemon, onion, and garlic.
Rub herb/oil mixture all over the outside of the chicken.
Bake for 45 minutes covered with foil and then 30 minutes uncovered until golden brown and crusty.
Let rest 10-15 minutes before serving, to allow juices to redistribute.
