Ingredients
- Curry Mayonnaise:
- 1 lb. Cooked Chicken Breast
- 1 1/2 oz. Raisins
- 1 1/2 oz. Pecans
- 2 cups Mayonnaise
- 2 tablespoons Curry Powder
- 4 oz. Cream of Coconut
- 1/8 cup Honey

Preparation
Step 1
Dice the chicken to 3/4" pieces and chill.
Place chicken into a stainless steel bowl and add raisins and pecans and refrigerate for one hour. Combine the ingredients for the Curry Mayonnaise and mix thoroughly.
Before serving, add two cups of Curry Mayonnaise to chicken and toss gently.
