Arugula with Berries and Feta

  • 1/4 c. sliced almonds
  • 2 T. rice wine vinegar
  • 2 t. honey mustard
  • 1 t. ground coriander
  • 1 t. honey
  • Salt and freshly ground pepper
  • 5 T. vegetable oil
  • 1 5-oz pkg baby arugula
  • 4 oz. feta cheese, crumbled
  • 1/1 /3 c. blueberries (1/2 pint)

Step 1

1.Preheat oven to 350. spread almonds on baking sheet; bake until golden, 5-7 minutes, stirring once. Immediately transfer to a plate to cool.
2.In a bowl, whisk together vinegar, mustard, coriander, honey, and salt and pepper to taste. Slowly whisk in oil.
3.Arrange arugula on each of 4 plates. To with an ounce of feta cheese, 1/3 c. blueberries and drizzle of dressing.
