Ingredients
- 1 1/2 cups milk, scalded
- zest of one orange
- 5 egg yolks
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon vanilla
- 1/2 teaspoon orange liquor
- 1 tablespoon butter
- 1 tablespoon heavy cream
Preparation
Step 1
In a medium saucepan scald the milk (just before it simmers), then add orange zest.
In a mixing bowl with flat paddle, mix egg yolks with sugar until light, and then add corn starch until ribbons form. Add the milk into the yolks, slowly, then put the mixture back into the saucepan and heat until thickened. Turn off the heat and add vanilla and orange liquor and butter and cream. Pour through a sieve, then cover with plastic wrap directly on custard and refrigerate completely for at least 3 hours.
Layer over pound cake and berries and whipped cream.
