Ingredients
- 3 large garlic cloves, unpeeled
- 1 T plus, 1 t. olive oil
- 1 19-0z can garbanzo beans, drained
- 1/4 c. fresh lemon juice
- 3 T. sesame tahini
- 3 T.water
- 1 t. coarse salt
- 1/4 t. cayenne pepper
- 1/4 c. fresh chives, minced

Step 1
Preheat oven to 400.
Place garlic cloves on small piece of foil and drizzle with 1 teaspoon olive oil. Seal foil to form pouch and roast in oven 20 minutes. Remove garlic from oven and allow to cool slightly. Peel and transfer to bowl of food processor. Add chick peas and process until finely chopped.
Add lemon juice, sesame tahini, water, salt and cayenne pepper and 1 T. olive oil. Process until smooth. Stir in chives and transfer to serving bowl. Serve with assorted
crudites or bagel chips.
