Satay Chicken

Ingredients

  • 1 tablespoon sesame oil
  • 1 tablespoon garlic oil (or 1tbsp olive oil and 2 cloves of garlic)
  • 1 tablespoon soy sauce
  • 2 tablespoons sweet chilli sauce
  • 3 ounces smooth peanut butter
  • 2 tablespoon lime juice
  • 1 medium red chili, chopped fine
  • 1.5 lbs. chicken

If you like things a bit spicier, add 1 medium size red chilli, chopped up nice and fine. And I have also on occasion zested a little bit of the lime into it as well, but not too much, just enough to add to the zing! But the basic recipe is good on its own and I use that for people who have mild palate when it comes to spice

I use this as a marinade, so I put all the ingredients together in a plastic freezer bag or similar. It is really really sticky, so I smoosh it around within the bag just to mix everything together. It'll stay quite clumpy but thats OK.

Then I put the chicken in there. You can use any kind or part of the chicken you like. I have used it on wings, legs, thighs, breast - anything! I use about 750g/1.5lb of chicken for this amount of sauce. Smoosh the chicken around in the bag so it all gets covered in the peanut butter goodness.

Then I put it in the fridge, for at least a few hours, to marinade. Overnight is OK too.

Then I cook in the oven, at about 200C/390F until cooked, which takes 15 mins or so depending on your oven. The marinade will caramelise and there will be a little bit of juice and blobs of the marinade in the bottom of the pan which I mix together at the end and spoon over the top

I usually serve it with rice and maybe other veges - carrots, zucchini, capsicum/peppers are all good but whatever you like.

Also, if you like your chicken kebab style (like at a BBQ) you can use thigh/breast meat and chop it into bite size pieces and thread it onto a kebab stick, with onion and pepper. Nom!!
