  • 2 2 2 bunches of kale, washed and de-stemmed
  • 1/2-1 1/2-1 1/2-1 cup dried cranberries
  • 1/4 1/4 1/4 sweet or red onion, thinly sliced (opt.)
  • 1 1 1 orange, segmented
  • 1/2-3/4 1/2-3/4 1/2-3/4 cup favorite raw nuts, rough chopped Pecans or pine nuts are really good in this.
  • to options to add: diced apple, grated carrot, diced bell pepper, pomegranates
  • 1 1 1 orange, juiced
  • 6 6 6 Tablespoons Extra-virgin olive oil
  • 2 2 2 Tablespoons apple cider vinegar
  • 1 1 clove 1 small clove garlic, minced
  • 3 3 3 Tablespoons agave
  • to pinch himalayan salt to taste
  • to to taste
  • dash a dash of coconut aminos, tamari, Bragg's, or nama shoyu
  • to all dressing ingredients in a bowl except olive oil and whisk until blended. Slowly add olive oil, whisking to emulsify.
  • Taste for seasonings and adjust if necessary.

Place all dressing ingredients in a bowl except olive oil and whisk until blended. Slowly add olive oil, whisking to emulsify.

Taste for seasonings and adjust if necessary.

Place kale in a bowl and pour 1/2 of the dressing on top. Massage dressing into the kale with your hands. You will k now when it's ready as the leaves begin to soften quite quickly. Add more dressing as needed to soften leaves. Add other ingredients. Let the kale mixture rest ot marinate in the fridge or eat immediately.
