Ingredients
- 4 firm ripe tomatoes, skins and seeds removed
- 2 seedless English cucumbers, peeled, seeds removed
- 5 tablespoons oil
- Juice of one lime
- 2 garlic cloves, peeled and crushed
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground pepper
- 3 scallions, chopped
- 5 radishes sliced
- 1 cup fresh chopped parsley
- 1/3 cup fresh chopped mint
- Dash of nutmeh

Preparation
Step 1
In a bowl, cut tomatoes and cucumbers into 1 inch cubes. In a large bowl, whisk together olive oil, lime juice, garlic, salt, and pepper. Toss tomatoes, cucumbers and remaining vegetables and herbs. Serve immediately.
