Ingredients
- 6 roasted beets
- 1 large onion sliced
- 3 tsp olive oil
- chopped clove garlic
- 1 cup chopped mushrooms
- 1/2 cup chopped walnuts
- 6 tbsp red wine or red wine vinegar
- 1 tsp dried tarragon
- 1 tsp chopped parsley
Preparation
Step 1
Roast beets at 375 with olive oil, wrapped in foil for 1-1.5 hours
Peel and slice beets
Saute onion,
Add garlic, mushrooms, and walnuts
Add wine and tarragon
Preheat oven to 325
oil a baking dish and place beets inside
Spread saute over the beets and sprinkle with parsley
Cover with foil and bake for 30 minutes
