Pear, Raspberry, and Chocolate Crumble

Ingredients

  • 2 pounds Ripe (but not over ripe) Pears – peeled, each pear sliced into 8 pieces
  • 1/3 cup Golden Caster Sugar
  • 1/3 cup Boiling water
  • 1 Teaspoon of Vanilla Extract
  • 2 Teaspoons of lemon juice
  • 1 cup Fresh Raspberries
  • 1/3 cup of White Chocolate Chips/Chunks For the Crumble
  • 2/3 cup Plain Flour
  • 1/2 cup Butter
  • 1/2 cup Golden Caster Sugar
  • 1/4 cup Rolled Oats
  • 1/4 cup White Chocolate Chips/Chunks
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg

Preparation

Step 1

1.Pre heat the oven to 180 degrees. You will also need a shallow dish.
2. First make the crumble. Place the flour; spices, butter and sugar in a process and pulse until it resembles fine breadcrumbs (do not over process!).
3.Stir in the oats and the white chocolate chips/chunks. Make the syrup.
4.Dissolve the golden caster sugar in the boiling water and add the vanilla and lemon juice. Pour this into the dish to be used for the crumble.
5.Add the peeled and sliced pieces of pear, ensuring they are coated with the syrup.
6.On top of this add the raspberries and finally add the white chocolate chips/chunks.
7.Top with the crumble mixture and place in the oven and cook for about 45 minutes until the crumble topping is golden color.
